I want to refresh my knowledge on Probability, Stochastic Process and Statistics in English. I learned those stuffs in Chinese, and forgot most of them,
Could you recommend some good classic introductory textbooks on those topics?

For a book being good and classic, I means it has the reputation among its peers like "Fayman's Lectures on Physics" has among Physics textbooks.
