What I know is to stack pics with different exposures, mainly to enhance the details in underexposed area. HDR from a single pic is used because of the motion of the subjects. For stationary subjects, people usually take multiple exposures of the same scene for stacking. Nowadays, the camera sensor has higher dynamic range, meaning you can manipulate the exposures of a single raw data file with fewer loss of fidelity. I use Photomatix to do HDR.
