A vegetarian salad most Chinese will love (or at least don't hate)

Very easy, given that it has quite sophisticated taste. Got inspiration from a Italian-Portugees party.

Ingredients: Peppers, penne (or other pastas), tomatoes, garlic, olives, fresh basil leaves, extra virgin olive oil, salt

1) Grill the whole peppers (use oven or grill) until the skins turns dark and burns.

2) Boil the penne until al dente. Rinse it in cold water.

3) Meanwhile, cut tomatoes (I usually use cherry tomatoes), cut olives into small pieces and chop the garlic (don't need to be very fine--don't chop it into paste.)

4) Put the garlic and salt into the salad bowl. When the peppers are ready, peel the skin and get rid of the seeds inside. Put it into the salad bowl THEN pour extra virgin olive oil lavishly.

5) Break the peppers into medium pieces with fork and/or dinner knife.

6) Put penne, tomatoes and olives inside. Tear the basil leaves into small pieces and put them in. Toss and ready to serve.

Note: 1) you can add a bit lemon juice if you want it to be more conventional salad. Don't add balsamic though.

2) Grill pepper, garlic and olive oil themselves constitute another dish: a traditional Portugees salad, great if spread on the bread. Perfect with Caipirinha!
