They are among the best national parks. Yes, Arches is a must too.
Depend on how much you like hiking, one day in Bryce Canyon and two days in Zion should cover most of them.
You might want to check the Zion Lodge first. If you go there in next couple of weeks, I believe you should be able to find room still available. There are too many people in the summer in both parks.
