You either buy international roaming service or get a SIM card in China if you have a compatible and unlocked phone. I have never tried local SIM. International roaming is convenient as you don't have to do anything to the phone and your friends in US can reach you as usual. It is expensive of course. Communication on travel costs almost same to the food everyday.
