Modeling of molecular structures (proteins); Biomechanics; Modeling of interactions between biomolecules or biomolecules/foreign materials.
Since most of the biological and medical studies are experiment-based and hardly use 'real' mathematics, one actually has plenty of room to play with. The problem is to convince experimentalist to believe what you are doing. The best way is to work very closely with biologists, microbiologist or medical doctors.
