Which is not very rare in folk songs. Your being skeptive is valid, but church cadence is simply not the case here, as there is no accompany to play the missed B and D. The only thing in the background is the percussion (not tuned kettledrum). That I am 90% sure. Gotta watch the tape again to settle the case 100% though. :-)

For the same reason, there is no 3rd inversion of Fmaj. Because there are only 3 voices and no accompany to play that fouth added note.
